At Blue Smoke, our meats are slow smoked, even up to 14 hours. Any properly smoked meat will have a pink or reddish tint (otherwise known as a "smoke ring"). This is the chemical reaction of consistent smoke and the proteins in the meat. Chicken, being the highest in protein, will show this pink tint more.
All of our meats are thermometer checked before coming off the pit to ensure they are fully cooked, tender and moist for a great Blue Smoke Dining Experience! Due to the long cooking process, there is a possibility of being sold out of our smoked meats on any given day.
All plates are served with two sides and your choice of hushpuppies or rolls. Baskets are served with one side.
